VANILLA SPONGE CAKE - 2

Prepared this cake a week before. The proportion of the ingredients are unusual, but to my surprise the cake was soft and moist.Its the BETTY CROCKER recipe.As the quantity of flour is more,we can prepare 2 cakes.

Ingredients:
All purpose flour   2 1/4 cup
Sugar                   1 1/2 cups
Butter                  100 gms
Milk                     1 1/4 cups
Baking Powder     3 1/2tsp
Eggs                    3 no
Vanilla extract      2 tsp
Salt                      a pinch.

METHOD :
Preheat the oven @ 180*C. Grease and flour the baking tray.
Powder the sugar. Seive the flour, salt and baking powder thrice.
Beat the butter and sugar till light.Add eggs and beat well.
Add milk and seived items alternatively.Mix well in same direction.
Add essence and mix.Pour into the baking tray and bake @ 180*C for 25 to 30 mins or till done.
